| Republic Dining boasts a monthly menu as well as daily specials reflecting the freshest of local produce.
Chef, Chris Coolahan, leads the team at the Republic combining Mediterranean flavours with Australian seasonal fare. He aspires to bring simple modern bistro food to the business district of Sydney. At 27, he brings a wealth of experience to the Republic. Beginning his career in Newcastle and the Hunter Valley, he then moved to London to Chef in the kitchens of Mirabelle and Daphnes. Since moving back to Sydney, he has served as Sous Chef at MG Garage, then at the Republic until taking the Executive Chef position in July 2005. In his time as Executive Chef Chris has taken the dining at the Republic to new heights. Republic Dining, on Level 3 is open Monday to Friday for lunch from midday. Private dinners can be arranged by appointment. |
